Authentic Aglio e Olio Sauce
Ingredients

1/4 cup olive oil (extra virgin for the best flavor)

4–6 garlic cloves, thinly sliced

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

1/4 cup fresh parsley, finely chopped (optional)

Salt, to taste

Grated Parmesan or Pecorino Romano cheese (optional, for serving)
Instructions

Heat the olive oil in a large skillet over medium heat.

Add the sliced garlic and cook gently, stirring frequently, until golden and fragrant (about 2–3 minutes). Be careful not to burn the garlic.

Stir in the red pepper flakes, if using, and cook for another 30 seconds.

Remove the skillet from heat and toss in the fresh parsley. Season with salt to taste.

Combine with freshly cooked spaghetti, tossing to coat the pasta evenly in the sauce. Add a splash of pasta cooking water if needed to loosen the sauce.

Serve immediately, topped with grated Parmesan if desired.
